A few weeks ago my friend Andrea Livingstone of Phyto Foods turned me onto this recipe for Paleo Breakfast Bread from Elana’s Pantry. I was so surprised to learn that you can make bread out of almond butter using zero flour I had to try it right away!
It came out really great. While the bread doesn’t rise much, the texture is very fluffy and bread like. After making one batch following Elana’s recipe, I had the idea to modify the recipe and make a savory bread instead. Here is what I did:
Ingredients for Savory Bread variation
½ cup almond butter
2 eggs
½ teaspoon Celtic sea salt
¼ teaspoon baking soda
2tablespoons olive oil
big pinch of chives, rosemary, rubbed sage or whatever herbs you like
2 tablespoons sunflower seeds
Directions
- Mix almond butter and eggs together in a large bowl until creamy.
- Add the herbs, salt, baking soda and stir well. (Don’t expect a dough– you should have a thick batter.)
- Generously grease an 8×8 oven safe baking dish with the olive oil.
- Transfer batter into the dish.
- Sprinkle sunflower seeds on top. (Next time I want to sprinkle coarse Celtic sea salt on top as well.)
- Bake at 325° for appx 15 minutes.
- Serve and enjoy with lots of yummy grass fed butter!
The next time I craved baked goods, I was all out of almond butter, but I did have some hazelnut butter on hand, so I decided to try something sweet. Here are the ingredients I used. The directions are as above. It came out really tasty and cake like. I am sure the recipe can be modified more to make whatever kind of bread or cake you are craving at the moment. I love it cause it’s so yummy, so easy, so fast!!
Ingredients for Hazelnut Cake variation
½ cup hazelnut butter
2 eggs
¼ teaspoon Celtic sea salt
¼ teaspoon baking soda
2 tablespoons grade B maple syrup
2 tablespoons melted coconut oil or butter to grease the dish with
(optional: 2 tablespoons chocolate chips and/or chopped hazelnuts to sprinkle on top)
