This is fresh side pork, also known as sliced pork belly from our pastured, purebred Red Wattle Hogs. Our side pork has been sliced like bacon, in fact, it is the same cut as bacon without the cure and smoking treatment.
If you are a bacon lover but don't want the nitrates and nitrites that come with it, this cut is the way to go. It is thick cut and once fried up with just a touch of salt and pepper added, you will never go back to "regular" bacon. We put it on hamburgers for the ultimate taste sensation. I can't describe it, but I highly recommend it!

If you are not into dry curing, you can always brine and smoke them in your home smoker just like bacon. Cubed and fried up crispy, smoked jowl makes a great addition to pasta dishes, salads, omelets, skillets or anything. We even just snack on the pieces straight from the frying pan.
