Local Focus
Deliveries are made by bicycle, both our own and contracted with Pedalers Express, to Eugene area stores.
We buy products locally when available. We purchase as close to the source as possible, preferring to deal directly with the farmer.
We are located close to our customers to allow efficient delivery in town.
We are active in promoting community and in supporting other small businesses.
Office
We use recycled paper half-sheet invoices (saves a ream of paper per year), and our copy is on reused paper.
Envelopes are reused (as you know if you have received one!).
Reuse
Bulk liquids are delivered in reusable food grade containers with a deposit for return and we have a 90% return rate, saving 4800 containers each year from the landfill (approximately 9600 lbs. of plastic), since the recycling of this type of plastic is low in our area.
We collect, wash and reuse food-grade buckets from other food distributors. All of our glass jars and jugs are obtained used, and many of our plastic containers as well.
We have a zero waste policy and currently need only one household size trash can every two months to contain all our land-filled waste from the warehouse.
Relationships
We have been in business for 35 years and many of our suppliers have been selling to us for more than 15 years.
We believe that healthy relationships and good communication are a priority for a healthy environment. We are in this for the long term.
Green Power
We accumulate waste oil from returns to make into biodiesel.
We meet 100% of our electrical load with EWEB Green Power.

As whole grain bread flour, Red Fife is unparalleled. It has a profoundly herbaceous and nutty fresh wheat flavor. Bread made from Red Fife produces a moist, satisfying crumb and a lovely crust with deep toasty caramel notes. This flour is stone-ground in small batches to retain optimal freshness.  Hard White Wheat Flour
Order number of bags. This hard white wheat is grown without chemical sprays or pesticides on a local Food Alliance Certified farm, then milled locally at Oregon Tilth Organic and Food Alliance Certified Camas Country Mill. The milling process does not heat the grain or flour, keeping the volatile oils and nutritional benefits intact and thus making this a raw product. Best to keep stored in cool conditions. Using hard white whole wheat flour: Baked into bread, hard white wheat produces a lighter textured, lighter colored – and due to less tannin in the bran – sweeter bread than other whole wheat flours. This makes it a good flour to use when baking for children (and others!) who balk at heavier, denser whole wheat breads. Loaves rise about the same as for hard red winter wheat, and the crumb is nearly identical. It also makes great pan breads, flat breads, pizza crust and noodles.

Order number of bags. We are delighted to offer Transitional Whole Wheat Pastry Flour milled from locally grown Soft White Wheat. After being stone ground at Camas Country Mill in Eugene, this flour is sifted to remove 8% of the hull. (Unbleached white flour usually has 10-18% of the hull removed.) Closer to an all purpose flour than other whole wheat flours, our Pastry Flour is a bit heavier than all purpose flour, and has more flavor because more germ is intact.
