About Us
Tails & Trotters is a producer of hazelnut-finished pork, developing a truly Northwest prosciutto. We butcher our pork ourselves under USDA-Inspection, and sell to restaurants and retail outlets from Eugene to Seattle, as well as farmers markets in Portland.
Traditionally, pigs produced for prosciutto are fed a special “finishing” diet for their last 90 days, where a large portion of their feed is replaced with acorns. While the Northwest isn’t good acorn country, it’s renowned for its hazelnuts. The nut-finishing produces the fat-cover necessary for quality prosciutto curing, and adds a delectable richness.
We work closely with a family farm in Washington who produces our pigs year-round. The farm is certified by the Food Alliance for meeting comprehensive standards for sustainable agricultural and business practices. We source our nuts directly from a family-run grower/processor dedicated to quality hazelnuts. Our pork is processed in small batches under USDA-Inspection at every stage.

The quality of life of our pigs is of paramount importance to the quality of all Tails & Trotters (T&T) products. We work closely with a family farm in Ephrata, Washington who produces our pigs. The farm is certified by the Food Alliance for meeting comprehensive standards for sustainable agricultural and business practices.
Our pigs are fed a diverse diet that is specifically formulated to their growth needs. Our pigs are NEVER fed corn or soybeans, and our grower has 3rd-party verification for non-GMO feeds.
Traditionally, pigs produced for prosciutto are fed a special “finishing” diet for their last 60–90 days where a large portion of their feed is replaced with acorns. Finishing provides increased flavor to the fat and meat, as well as produces the necessary intramuscular and subcutaneous (under the skin) fat cover necessary for prosciutto production—our main long-term objective.
They are never administered or fed antibiotics, hormones, growth stimulants, or animal byproducts (pigs that become sick and require medication are sold through conventional channels after the requisite waiting period).
Additional Information
Our pork may not be suitable for those with severe nut-allergies, due to the high level of hazelnut-oil in the fat.
Because we butcher most cuts to order, please allow 2 order cycles for delivery. We will always fill orders the cycle the order is placed when possible.
