About Us
Kookoolan Farms is a diversified, pasture-based, small family farm, founded october 2005 by Chrissie and Koorosh Zaerpoor. We started farming because we wanted to work together, and we wanted to eat better quality food than was available for us to purchase at that time.

Ingredients
Our Kombucha is made from certified organic, fair-trade-sourced teas custom blended for us by Tao of Tea, and from certified organic evaporated cane sugar. Our Meads are made from the best quality honeys we can find. Our Vin de Noix is made from Demeter-certified biodynamic pinot noir, walnuts from our own never-treated walnut tree, and certified organic sugar and vanilla.
Practices (our standards for raising or making our products)
We are not certified organic, but in more than seven years of farming we have never bought or used any synthetic fertilizer, pesticide, herbicide or fungicide. Our animals do not receive any daily medications or antibiotics of any kind, although we have occasionally treated acute injuries or illnesses with medications, the same as we would do for members of our family. Everything we offer for sale is fully legal and licensed. Kookoolan Farms is the only organic vegetable farm we are aware of that DOES NOT import composted manure from confinement animal feedlot operations -- because we combine animal and vegetable farming on our own farm, all of our compost is produced on our own land from the manures of our own animals, thus ensuring that even our compost does not contain trace chemicals, medications, or antibiotics. All of our livestock spend at least some of their lives outdoors on pasture; for our beef and lambs, this is 100% of their lives. We do provide some supplemental grains for beef (mostly as a training aid -- once a herd of beef steers have broken the fence and are out on the highway, it's a lot easier to get them back where you want them if they already know the sound of a grain bag rattling!) but they are ALWAYS on pasture as their main food source, supplemented with grass hay and alfalfa hay in winter.

Our version is made with red wine from Montinore Estates: the grapes are certified organic and Demeter certified biodynamic. Christian Brothers brandy used at one part per five parts of wine. Certified organic cane sugar, organic vanilla beans, orange peel, and cloves are also added. All is macerated and allowed to steep and blend for about four months, then solids strained out and the wine bottled. For a split quarter, youd get an assortment of cuts from both the front and rear of the animal, including about 20 percent steaks, 20 percent roasts, 35 percent ground meat (or about 21 pounds ground meat plus about 3 pounds stew meat), and miscellaneous other cuts including cross-cut shanks, brisket, short ribs, spare ribs, stew meat, etc. Its about 120 pounds of finished meat, about 5 cubic feet of freezer space. Taking reservations now for animals that would be delivered to KTF Tuesday Feb 28th. Lots of availability for 1/4ths. $100 deposit required. In 2011, beef halves ranged in weight from 260 to 360 pounds, with most coming in between 310-340 pounds. With all our shares, you can request soup bones and organ meats too, at no additional charge.
A regular 1/8th beef share is about 85 pounds hanging weight. Youd get an assortment of cuts from both the front and rear of the animal, including about 20 percent steaks, 20 percent roasts, 35 percent ground meat (or about 21 pounds ground meat plus about 3 pounds stew meat), and miscellaneous other cuts including cross-cut shanks, brisket, short ribs, spare ribs, stew meat, etc. Its about 60 pounds of finished meat, about 2.5 cubic feet of freezer space. There is NOT the option for custom cutting for a 1/8th share. $50 deposit required. The deposit will be applied towards the final cost of your share. The photo shows an actual 1/8th beef share which had a hanging weight of 75 pounds (on the small side).
